Regency Agar (also called Chinagrass, Faloodagrass, Faloodasev) has very rich dietary fibre content (about 80%), is high in protein and has strong setting properties – it will set at room temperature in less than an hour although it is advisable to store dishes gelled with Regency Agar in refrigerator. Regency Agar is a vegetarian alternative to Gelatin, and is derived from Gracilaria (Gelidium species) a bright red sea vegetable with the botanical name of Gleidium purpurascens. Regency Agar is used as a texturising agent, emulsifier, stabilizing agent and thickener in many processed foods such as puddings, Ice-creams, Jellies, Salad Dressings, Doughnuts, Marmalades and Jam, Falooda, Cheese, Gelatin fruit desserts, Bakery fillings and icings, as also in dry and canned soups.

Applications:-
Regency Agar is used as a texturising agent, emulsifier, stabilizing agent and thickener in many processed foods such as Puddings, Ice-creams, Jellies, Salad Dressings, Doughnuts, Marmalades and Jam, Falooda, Cheese, Gelatin fruit desserts, Bakery fillings and icings and Dry and canned soups.

Directions:-
For best results, Regency Agar should first be soaked in the liquid for about 10 minutes then gently brought to a boil and simmered while stirring until it dissolves completely. Add other additives or serve it on its own.
